Synopsis

Catherine Cervasio's Fellowship explores the fascinating world of olive oil and ways to utilise the waste (pomace) generated during processing. Rich in antioxidants, with possible antimicrobial, antiaging and anti-inflammatory benefits, the Fellow shares her ideas around the collecting, stabilising and utilisation of pomace across the beauty industry. Due to the presence of phenols, pomace is considered phytotoxic and therefore an environmental hazard. With olive oil consumption on the rise comes the increase in pomace output. Read how this Fellow is promoting the formulation of innovative, natural and organic face and body products, using upcycled olive ingredients.
